Bites Baked Egg White – A Beautiful Message

If you’re looking for an easy and delicious breakfast for a group or to prep and eat within a few days, try this toasted egg white bread recipe.

You don’t need any special equipment outside of the oven and standard size muffin tin. Plus, you can customize all of these!

Egg White Bite Ingredients:

• Egg whites – or you can use whole eggs (see recipe notes)
• Cottage cheese – extra cream and more protein
• Salt + pepper
• Additional utilities: Smoked porkscallions, chopped red peppers, etc.

How to make egg white bread:

Simply stir all ingredients together. Pour into greased muffin pan and bake at 350°F for 25-28 minutes.

You can keep these baked egg whites whole or add to any mix of ingredients you’d like. I usually add pieces of bacon or crumbles vegetarian sausagechopped scallions, and a little cheddar cheese sprinkled on top before baking.

How long does an egg white bite last?

Once baked, you can store them in an airtight container in the refrigerator for at least three days (and possibly longer).

1. In a mixing bowl, separate the egg whites from the yolks. You can reserve the yolk for another use (like French toast or creme brûlée).

2. Whip the cheese, bacon and scallions.

3. In the greased muffin pan, spoon into the batter.

4. Sprinkle salt and pepper on top with cheddar cheese, if using.

5. Bake at 350°F for 25 minutes or until eggs set.

6. The bites will swell at the end of the baking time but will deflate some as they cool. Let them cool before removing from the pan.

If you want to use whole eggs instead of just the whites, you can use four eggs in place of the eight egg whites in this recipe.
