Sabudana, also known as tapioca or sago, is basically made with tapioca starch extracted from the roots of the cassava plant. While we all use sabudana to make khichdis and vadas, it is also commonly used to make snacks like fried! Use the sabudana you have at home to make these fries.

Soak sabudana overnight. Heat a pan and pour in the water, add the soaked sabudana. Cook sabudana until it is pasty and liquid. Season with salt, lemon juice and pepper. You can also add food coloring at this stage if you want. Spread a sheet of plastic and pour a spoonful of the paste on the sheet; this should be about the same size as the chips you desire. Make sure they don’t touch each other. Expose this to the sun for at least a day. Once the fries have formed, deep-fry them like you would deep-fry.
