Strawberry Cheesecake Parfait

Summer is coming and with it comes strawberry season. Nothing can match the taste of fresh berries. And since summer also means warmer weather, I wanted to get my hands on a few dessert recipes that don’t need to be preheated to the oven. That’s one of the reasons I created it these chocolate coconut no-bake cookies.
This no-bake strawberry cheese parfait recipe is a perfect summer choice. It’s elegant yet super easy to make, uses healthy seasonal ingredients, and is delicious too. I hope you like it as much as we do!
Make cheesecake without baking
The two main types of cheesecake are traditional baked and unbaked. Most people are familiar with grilled cheesecake.

While baked cheesecake relies on eggs and oven heat to thicken and set, no-bake cheesecake uses plain, unflavored gelatin instead. And since gelatin from a good source there are some great health benefitsThis seems like a win to me.
Using Gelatin
Gelatin occurs naturally in bone broth, but when I use gelatin for sweeter recipes, I use This gelatin is in powder form made from grass-fed cows.
To use any powdered gelatin, you must let the gelatin rise for a few minutes in the liquid form to cool before adding it to the warm liquid form. Otherwise, you may have lumps of gelatin in your finished dessert. For this recipe, use a wide bowl and sprinkle the gelatin over a small amount of cold milk and let it sit for a few minutes before stirring it in some warm milk.

How to make strawberry cheesecake
This dessert is really easy to make. To show off the signature layers of parfait, you need to use clear glass bowls or bowls. Choose whether you want to make individual cheesecakes or a large one, and alternate layers of strawberries and cheesecake mix in your dish.
For strawberry layers, simply chop or slice fresh strawberries. For the cheesecake layers, you whip the cream cheese, honey, vanilla, and milk/gelatin mixture together. Put it in your bowl, refrigerate, and that’s it!
I usually make it ahead of time and chill it until I’m ready to serve it. You don’t need to refrigerate, but the cheesecake will be slightly thicker and denser if you do.
Parfait Variations
These parfaits are as delicious as they are written, but there are a million ways you can customize them.
- Use a different fruit – blueberries, raspberries, peaches or a combination of fruits
- Add some crunch – small chocolate chips, chopped pecans, or Coconut Granola
- Add a bunch of citrus – fold the lemon or orange zest into the cheesecake mixture
- More chia – this recipe gave me the idea to pair my cheese parfait with my blackberry chia pudding
Strawberry Cheesecake Parfait
A quick and delicious no-bake cheese parfait recipe using gelatin, honey, cream cheese, and fresh strawberries.

Pour ¼ cup of cold milk into a wide bowl.

Sprinkle gelatin on top of milk and set aside for 5 minutes.

Meanwhile, heat remaining cup of milk in a small saucepan until hot.

Beat the hot milk into the softened cold milk/gelatin mixture.

In a mixing bowl, beat the softened cream cheese with the honey and vanilla until smooth.

Whip the milk/gelatin mixture.

Cut strawberries.

Place half of the strawberries in a large glass bowl or 8 individual glass bowls.

Pour half of the cheesecake mixture over the strawberries.

Place remaining strawberries and remaining cheesecake in a bowl.

Chill until ready to serve.
