Along the quaint streets of Old Delhi you will find a halwai shop called Sultanji Sweets & Snacks near Jama Masjid. The characteristic black color of jalebi is associated with the flour used to make this unique delicacy. Normally, jalebi is prepared with maida but black jalebi powder is made from khoya and potato starch. When this mixture is put in hot oil, khoya caramel will turn black. The black radish is then soaked in sugar syrup to give it a delicious flavor. These jalebis plants are also known as khoya jalebi or mawa jalebi. Jalebis are crispy on the outside and soft and greasy on the inside. This mawa jalebi is a combination of jalebis and gulab jamun, which makes them taste so good!
