A snack that’s neither too greasy nor too bland and boiled, a snack that’s delicious enough to keep us hooked but without necessarily using oil? Many people may tell you that it is not easy to find such a snack, but not us! Because what we have here fits the bill as both delicious and healthy, and the best part is that it doesn’t take much effort and doesn’t require more than a few key ingredients. It is a type of steamed salty rice cake from Andhra Pardesh and is called Chikudu Kudumulu, which translates as Kudumulu beans.

For the uninitiated, kudumulu is an Andhra-style steamed rice cake similar to a modak. They can be made sweet or savory. The ones we’re trying today are made with broad beans, rice flour and some simple brewed south Indian spices. Once they are set, many people fry them in oil for a while before boiling them in the same pan. These soft steamed buns go great with coconut chutney or garlic chutney. In the pan, add the chopped beans and boil until mushy. Put the green chili, garlic and ginger in the blender to make a smooth paste. Add this mixture to the boiling beans along with loads of chopped coriander and rice flour. Mix everything well and let it cool. Once cooled, knead the dough and shape it to your liking. Many people steam these in an idli dish or you can even cook them in a simple pan. Heat the oil and then put the rapeseed, now and rice cakes in the oil and fry for about 2-3 minutes, then pour the water and cover the lid to let the cakes cook into the steamer.
