Holi 2022: Enjoy the Festival of Colors With This Thandai Recipe by Chef Kunal Kapur
The festival of colors is just around the corner. While we prepare the colors and water bombs, there are a few other things that also need our attention. Without delicious food and refreshing drinks, Holi is incomplete. If you are part of a gathering or hosting a Holi party, you must be equipped with the perfect food and drink for festive fun. Thandai is a traditional Indian summer drink that uses milk, sugar, nuts and various spices to add a refreshing taste. So here is the Holi thandai recipe by chef Kunal Kapur.
Ingredient:
Full fat milk – 1 liter
Cashews (soaked) – 1/4 cup
Almonds (soaked) – 1/4 cup
Pista (soaked) – 1/4 cup
Cardamom (pickled) – 10 nos.
Pepper (pickled) – 10 nos
Poppy seeds (soaked) – 2 tablespoons
Fennel seeds (soaked) – 1.5 tbsp
Watermelon seeds (soaked) – 2 tablespoons
Cucumber seeds (pickled) – 1 tablespoon
Rose water – 1 tablespoon
Cinnamon powder – 1/2 teaspoon
Nutmeg powder – 1/2 teaspoon
Saffron (pickled) – a generous pinch
Drinking water
Sugar to taste

To make the perfect thandai, you don’t have to spend hours in the kitchen. Even so, you need to prepare certain preparations by soaking the nuts and seeds before making the drink.
In the first step, mix together the soaked cashews, almonds, pistachios, cardamom, pepper and cashews with a little rose water in a mixer. Also, add spices. Make sure the mixture has a semi-liquid texture. Add this mixture to a bowl of full-fat milk. Mix well. Serve cold with ice cubes. Add a few strands of saffron for garnish.
