Lauki Ka Bharta Here Is The Comforting Recipe You Must Try
Bharta is a popular dish loved by Indians around the world. A particular favorite of northern Indians, they mainly make bharta baigan (eggplant). But celebrity chef Saransh Goila shared an Instagram post to teach us how to make lauki (chai gourd) ka bharta. Although it may sound surprising, Saransh Goila is not afraid to try new things. His recipe sounds easy and the dish looks delicious (aka “delishaaas,” in the chef’s words). The video shows Saransh Goila licking her finger after tasting the dish. “Lauki ka bharta because it was our lauki day and I stayed up all night to lauki,” says Saransh Goila.
The chef said you need to season the spices nicely first. If not soft, you can also mix it.

Now let’s go step by step to do lauki ka bharta Saransh Goila style:
- Poke a piece of lauki with a knife and burn it on a gas stove.
- Remove the charcoal (skin) and chop the lauki into small pieces. Mince. Similarly, chop two onions and set aside.
- Add a teaspoon of mustard oil to the kadhai.
- Heat it up. When it’s ready or chonka, add some jeera, ginger, garlic and green chili.
- Now, add the chopped onion to the kadhai. Fry until golden.
- Now it’s time to spice it up. Add 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, 1 teaspoon of jeera powder, and half a teaspoon of haldi. Mix well and sauté for two minutes.
- Add the three tomato puree and sauté for another 10 minutes.
- Add the cotton swabs and the chopped salt now. You can also add some lemon juice.
