National Almond Day is celebrated by food and health enthusiasts on February 16 to pay tribute to this amazing superfood.
Here are the sweet almond delicacies you can try this day shared by Swapnadeep Mukherjee, Executive Chef, The Metropolitan Hotel & Spa.
1. Pineapple & BADAM HALWA
Ingredient
Almonds – 250 grams
Fresh pineapple – 200 gm
Desi boat – 150 grams
Sugar – 125 grams
Khoya danedar (Reduced Milk) – 150 gm
Cardamom (powder) – 1 gm
Cashews chopped – 15 gm
Method:
• First, wash, peel and finely chop the pineapple.
• Heat ghee in a heavy saucepan over medium heat. Add chopped pineapple and mix well with ghee. Cook pineapple over medium heat. Continue stirring until moisture is exhausted. Add the almonds and continue sautéing until the halwa thickens. Before adding the almonds, boil the almonds for 2 minutes, remove the skins, and then blend in a blender.
• Add sugar and continue sautéing until well combined. Add khoya and keep stirring to avoid burning. Turn off the fire. Add nuts and cardamom powder, mix well and serve hot or cold.
2. Crispy Almond Chocolate
Ingredient
Dark Chocolate – 200gr
Milk Chocolate – 200g
Almonds – 20 grams
Cashews – 20 grams
Dates – 20 gm
Pistachios – 10 grams
Red cherry – 10g
Raisins – 10 grams
Method:
• Take all the dried fruit, finely chop them. Take the milk chocolate and dark chocolate mixture and mix equal parts in each bowl. Then put in a double pot and cook for 5 minutes. and stir. Now mix chopped almonds and other dried fruits in this melted mixture
• Take any shaped mold and fill it to a nice shape and freeze for at least two hours. Garnish with almonds or dry chocolate or of your choice and enjoy!
3. ALMOND ice
Ingredient
Chocolate mousse cake
Dark Chocolate – 250g
Toasted almonds – 200 gm
Method:
• Break the dark chocolate into small pieces and melt on a double boiler. Filter and cool a bit (warm only)
• Add toasted almonds and mix
• Now place small piles of the mixture on a baking tray/or butter paper. Let cool. When cooked, sprinkle more white chocolate or of your choice on top, enjoy!
4. BADAM PHIRNI
Ingredient
Rice – 100 grams
Milk – 200 grams
Sugar – 20 grams
Almonds – 0.5 grams
Cardamom – 0.5 grams
Method:
• Soak the rice in water for 2 hours, take it out to drain, and grind the rice into a paste.
• Put the deep kadahi over medium heat, bring the milk to a boil. Add rice and cook over medium heat until thickened.
• Add crushed almonds and cardamom powder, mix well. Let it cook for a while, once done, garnish with nuts before serving.
