I’ll jump right in here and say: the first pizza I cooked in this compact, portable outdoor pizza oven was the best pizza I’ve made in my life. Until the six other people I cook in quick succession after that first pie—things become subjective based on the toppings choices. But every pizza is born from Ooni . outdoor pizza oven with a crust boasting the perfect blend of air pockets, some locations of charcoal and nutty flavors elsewhere.

And for the record, we made a lot of pizzas; score if it is not hundreds. My wife makes the dough and sauce (both from scratch) I’m pretty good at chopping and prepping ingredients, and our perfect oven can reach about 500 degrees, can cook a pizza Pretty good for 10 minutes or so.

But ours Ooni Frya? That thing heats up to over 900 degrees Fahrenheit, has a molten porcelain dish at the bottom and a roof on which licks of hot flame. This is why it takes less than a minute to cook a perfect pizza there—the heat.

Now, for your reference, the company manufactures several different ovens. Ours is Ooni Frya 12 Wood Pellet Pizza Oven, and from the end of this paragraph on, know that I will be talking about that unit exclusively. But you do have a few other options, such as larger ovens that can make 16-inch cupcakes, gas-powered ovens (as in propane), and multi-fuel options can use gas or wood and coal. But our Frya 12 works so well that I don’t even want to try the others.

Okay, now back to the heat, which is generated by a relatively small pellet-burning insert placed in the back of the oven and can self-refill via a hopper that you placed once. The tablets light up quickly with the help of any store-bought chemical-free chemist fire starter and in less than 15 minutes the oven will rise to about 900 degrees. In that scorching heat, it really takes less than a minute to cook a plate of raw dough topped with sauce, cheese, and toppings into a perfect pizza. The only thing to keep in mind is that you need to rotate the pizza once as it cooks, so really treat this as two cooks in 30 seconds and if you are cooking more than two or three pizzas you need to wait about three or four minutes after the second or third time to let the oven heat up again.

All told, once you warm up Ooni Frya, it only takes you a minute to have such a delicious pizza, you will never need to visit some brick oven pizzeria again. As for the sudden increase in visits from friends, family and neighbors you will experience? Well, can’t help you there.
