First, whisk together the cumin, coriander, canola oil, lemon juice, zest and garlic in a small bowl. Leave it by the side. Now take a cob and roast it with gas. Once done, chop the corn. Next, gently combine the corn, tomatoes, onion, olives and vinegar made above in a large bowl. Divide the lettuce into four plates, top with a salad, and garnish with any protein of your choice.
