Dashami 2022: How to Make Poddo Luchi – Bengali Undiscovered Bread (Poori)


The biggest Bengali festival Durga Puja is over and we will mark Dashami today (October 5, 2022). The lavish five-day festival begins on the sixth day of Navratri (Sashthi) and ends with Dussehra (also known as Vijaya Dashami). Durga Puja ends with a dip in the idol Goddess Durga and her children – Lakshmi, Saraswati, Kartik and Ganesh. This means seeing her daughter home (here: Kailasha). The day is marked by joy and happiness, where people gather after Visarjan to greet each other and exchange sweets. This ritual is called ‘Bijoya’.

And food plays an important role in ‘Bijoya’ gatherings. Here, people treat each other with salty and sweet dishes. Some even hold small parties in the house where everyone sings, dances and enjoys a sumptuous Bengali together. Taking this into consideration, here we bring you an unexplored recipe from the history of Bengali food culture that will add some delicious food to the festival.

This dish is called poddo luchi (Padma luchi) – a sweet, Bengali-style poori recipe, filled with mawa, dried fruit and more. This reishi has a sweet taste and can be enjoyed as such. For those who aren’t inverted, the name poddo (padma) luchi is derived from the shape of poori – padma/poddo is lotus in Bengali. The recipe of this classic Bengali dish was shared by chef Ananya Banerjee on her YouTube channel (Ananya Banerjee). Let’s take a look.

How to Make Poddo Luchi (Padma Luchi) – A Classic Poori Recipe from Bengal:

Start by kneading the dough with maida, salt and buttermilk. Then smear some buttermilk on top and cover with a damp muslin cloth. Let it rest for a while.

Meanwhile, prepare the ingredients by heating the buttermilk in a pan. Add dried fruit, cardamom powder and mix well. Add cashews and charmagaj and mix well. Turn off the flame and set aside.

Now, divide the dough into small balls and roll them as thin as luchis. Then add some stuffing in the middle and cover with another luchi. Press and glue the edges.

Then, heat the oil in a pan and fry the luchis until golden brown. Dip luchi in sugar syrup and serve.
