National Muffin’s Day 2023: Irresistibly delicious muffin recipe to enjoy as an evening snack
The humble muffin doesn’t need a special occasion. 1. Blueberry Ragi Muffins
(Recipe by Chef Arvind Rai, Executive Chef, Ashok Hotel)
Ingredient
1. Filtered Powder – 200 grams
2. Finger millet powder – 50 grams
3. Whole finger millet – 50 grams
4. Butter – 300 grams
5. Sugar – 300 grams
6. Eggs – 9 Nos.
7. Baking powder – ½ tsp.
8. Vanilla essence – 5ml
9. Cauliflower Blueberries – 100 grams
10. Broken cashews – 100 grams
Method
– Bring the butter to room temperature. Take a mixing bowl and beat the butter in it with a whisk. Add sugar and beat until it becomes softer and smoother.
– Slowly add the eggs one at a time while whisking. Continue beating until you get a smooth, creamy texture of the dough. The whole beating process can take up to 15-20 minutes.
– Dry roast finger millet and grind into coarse powder.
– Mix flour, finger millet, roasted and ground finger millet, baking powder and then slowly add the flour mixture and mix well with a spatula. Gently stir and blend the mixture, while you continue to add the flour to the flour mixture.
– Add Blueberry filling to the mixture.
– Preheat oven to 175 degrees Celsius.
– Pour the prepared batter into the muffin pan, sprinkle the crushed cashews on top and bake in the preheated oven for 15-20 minutes or until a toothpick or skewer inserted in the center of the cake comes out clean.
– Let cool to room temperature then use.
2. Chocolate Almond Muffins Recipe

Ingredient
Cocoa powder – 4 tbsp
Coarsely ground refined flour – 2 tbsp
Chopped Almonds – 10-12
Eggs – 4
Sugar – 1 cup
Refined flour (maida) – 3 tablespoons
Melted Butter – 4 tbsp
Method
– Preheat oven to 180ºC. Eggs to the bowl.
– Add sugar and blend with hand blender until frothy. Sift the flour and cocoa powder into a bowl. Add coarsely ground almonds and mix.
– Gradually add this flour mixture to the eggs, using a blender to mix continuously. Add melted butter and mix.
– Pour batter into muffin pan until half full. Sprinkle chopped almonds on top and bake in the preheated oven for 20 to 25 minutes.
– Eat hot.
