Oil-free Pickle Recipe: This Healthy Garlic Achaar is Perfect for a Weight Loss Diet
Indian pickles have a huge fan base, not only in India but all over the world. The eclectic flavor of achaars is enough to spice up any bland meal. We all love achaars, but when we see a thick layer of oil floating on them, our brains drive our minds into a frenzy. Oil is something that all weight watchers want to avoid. So for them, we’ve come up with a completely oil-free achaar recipe. This garlic pickle is full of flavor and spice, but free of oil and salt; but it smells and tastes very good.
We found this oil-free garlic pickle recipe on the ‘Cooking With Reshu’ YouTube channel and found it perfect for our weight loss diet. This achaar is made using the traditional technique of mixing all the ingredients together and letting it soak in an acidic liquid for days to ferment. The combination of garlic, ginger, kalonji and whole red chili is really amazing. But remember to roast the kalonji first as it gives off an invigorating aroma that will make this achaar recipe even tastier.
Here is a step-by-step recipe for an oil-free garlic pickle.
I How to Make No-Oil Lehsun Achaar Garlic Pickled Recipe:
Take 200 g of garlic and peel it and let it dry completely. Peel and cut the ginger into small round slices. First, roast some kalonji for 2 minutes. Put some red pepper in a bowl. Add garlic, ginger and dried raw mango, also known as khattai. Add a generous amount of sirka ganna (cane) and kalonji. Mix everything well. Store the mixture in a jar for 10 days. Stir it once per day. Use it as an accompaniment after 10 days. If desired, you can sprinkle some salt on it while serving.
