Chef Saransh Goila heard our wishes and he served us with just the recipe we were looking for. Sharing his recipe on Instagram, he wrote, “What’s your favorite Christmas salad? Mine has to be strawberries, walnuts, and feta salad. Will you make this this Christmas? It’s pretty tasty.”
Here are the ingredients you need to prepare his special Christmas salad:
Arugula
Vegetable spinach
Strawberries, 80g, sliced
Onion, 1 large, sliced
Cherry tomatoes, 6-8 pieces, halved
Avocado, 1 piece, diced
Walnuts, 45g
Castor sugar, 50g
Garlic, 10g, minced
Olive oil, 50 ml
Balsamic vinegar, 20ml
Honey, 10g
Peanut butter, 15g
Salt to taste
Crushed black pepper to taste
Feta cheese, 30g, crumbled
Once you have all the ingredients with you, you can start making the salad. Here is the procedure to make it grow:
- Melt the castor sugar in a pan until golden. Put the walnuts in and wrap them in the syrup. Set this aside to crystallize.
- After the sugar coated walnuts have crystallized, grind them coarsely.
- Put the crushed walnuts in the blender. Add garlic, olive oil, honey and balsamic vinegar, peanut butter, salt, and crushed black pepper. Mix all ingredients together. This is the dressing for the salad.
- In the salad bowl, add the arugula and baby spinach.
- Top with strawberries, onions, cherry tomatoes and avocado.
- Add feta cheese and walnuts to this salad.
- Drizzle a generous amount of dressing over the salad.
- Add sparkle to your salad bowl with star-shaped toast.
