Mindy Kaling teaches us how to make delicious Bengali egg curry
Easter is over and the Easter Bunny may have left behind a bunch of hard-boiled eggs. But you don’t need to worry about eating hard-boiled eggs that are simply bland. Instead, you can use boiled eggs to make a wonderful egg curry. Why not try the traditional Bengali egg curry? Mindy Kaling is here to serve us a delicious recipe in this respect. She posted a video of this recipe on Instagram. She captioned it, “It’s true that Easter Bunny left hella poached eggs in this house. So how to make the traditional Bengali egg curry? These are the ingredients you need for it.
Potatoes
Tomato
Onion
Thoroughly boiled eggs
Chili
Salt
Turmeric powder
Black pepper
Oil
Red chili powder
ginger
Garlic

Here is how you can easily make Bengali egg curry:
Step 1: Peel the boiled egg.
Step 2: Marinate eggs with salt, turmeric and black pepper powder.
Step 3: Pour some oil into the pan.
Step 4: Put the marinated eggs into the frying pan.
Step 5: Diced potatoes and then fried with eggs. Add turmeric powder, red chili powder and salt to taste.
Step 6: Prepare the tomato puree. Blend chopped tomatoes, ginger and garlic with water. This puree makes the curry smoother.
Step 7: Remove the eggs and fried potatoes to the tray.
Step 8: Put the crushed bay leaves and cardamom into the oil pan.
Step 9: Add diced onion and saute until fragrant.
Step 10: Pour the tomato puree into the pan.
Step 11: Add the chopped chili along with red chili powder, cumin powder, coriander powder and salt.
Step 12: Let the curry boil for 10 minutes.
Step 13: Put the fried potatoes and eggs in the curry pan.
Step 14: Add cilantro to decorate the dish.
Step 15: Serve hot.
