Difficult to make Phulka soft and spongy? Here’s how to do it like a pro
The humble roti is a staple food in the Indian subcontinent, cooked at least once a day in every household. It is often combined with a variety of other additions such as vegetables, toppings, curds, and chutneys. But what makes the roti stand out? It is most loved when it is hot and puffy and round, commonly known as phulka. Often the roti doesn’t come out the way we want it to. Uma Raghuraman, a food blogger, has posted a video tutorial on her Instagram account showing exactly how you can make phulka.

Her recipe has 8 steps. It’s not rocket science but attention to detail is always a prerequisite for improving anything. The steps are:
1.Measure flour (atta) and water (room temperature) in the same cup. If you are drinking 2 cups of atta, then take 3/4 cup of water.
2. Do not add all the water in one pour to make the dough. Add water gradually as required.
3. Add a tablespoon of buttermilk or oil to knead while kneading. This will make the dough suitable for roti soft and tasty.
4. Set dough aside for at least 10-15 minutes.
5.Use a stable rolling board and thin belan. Finding the right one can take a lot of trial and error.
6. Beginners should start with small scale rotis creation. Once you’ve mastered it, go for the bigger stuff.
7. Do not press too hard when rolling the dough. Do this so that the roti does not swell.
8. Now, it’s time for some real action. Heat the tava and place the rolled roti on top. When bubbles start to appear on top of it, flip and feed it directly over the flame or a roti wire roaster. When doing so, keep the flame high. The roti will puff up beautifully.
If you prefer an even softer roti, grease it with buttermilk and then flip over the tava to cook on both sides.
