Apart from special occasions, we love to have hot pooris even on weekends or in general. However, the whole process of preparing it can be a bit complicated when you go into the kitchen with the mind to get the right texture and flavor. So if you’re thinking of making pooris, we have a few tips for you. These suggestions will not only help you during the cooking process, but will also eliminate the possibility of making mistakes in between. The tips were shared by chef Kunal Kapur on Instagram.
Here are five tips for making stuffed Pooris, shared by chef Kunal Kapur:
1. To make pooris cake, you have to knead the dough first and prepare the stuffing. Now, make different equal sized dough balls from the dough as well as stuffing. Take a (relatively smaller) dough ball and insert it inside another ball of dough. Press the dough ball and remember to seal the dough nicely. There should not be any cracks. If you don’t do it properly, chances are all the stuffing will come out when you are frying poori in oil.
2. When you roll a poori, never use dry flour. Why? This is because the powder dries out when applied to the balls while rolling pooris, which can settle to the bottom of the oil. In addition, when you deep fry pooris oil, dry flour will stick to it, affecting its overall flavor.
3. While kneading the dough for pooris, remember not to use much water. The dough for pooris should have a firmer texture than the soft dough you prepare while making rotis at home. This powder will help pooris puff up properly.
4. When you fry pooris, the oil must be extremely hot. This is to protect them from getting greasy or soggy. You can test it first. As soon as you are about to put pooris in the oil, just put a small piece of dough inside and it will sizzling and rise to the surface immediately.
5. And of course, while doing all this, you must know that you cannot put poori flat in the oil. It can be dangerous. The idea here is to hold the poori upright and gently slide it down into the oil from the side.
